Squash pancakes

In autumn, squash is absolutely everywhere on market stalls! Soft, gently sweet, with sometimes a hint of hazelnut depending on the variety — here is a vegetable that babies absolutely love!

Ingredients:

  • 400g cooked squash
  • One grated courgette
  • One tin of chickpeas
  • One egg yolk
  • Half a cup of flour
  • Olive oil
  • Spices of your choice: paprika, cumin, salt, pepper

Autumn BLW recipes:

  1. First, blend the squash until smooth;
  2. Then add the remaining ingredients and spices, except the oil;
  3. You will end up with a fairly liquid batter, almost like a crepe batter;
  4. In a non-stick frying pan, pour a little olive oil and drop in small spoonfuls of batter without overcrowding the pan;
  5. Flip over after a few minutes;
  6. Continue with the remaining batter.

You can absolutely freeze these baby pancakes if the quantity is too large! You'll simply need to reheat them at mealtime.

Baby aubergine fritters

Aubergine, other than in a ratatouille, can sometimes leave you wondering what to do with it. Well, it turns out there is more than one way to enjoy it. Here is a recipe the whole family should love.

Ingredients:

  • 1 aubergine
  • 50cl vegetable oil (groundnut, hazelnut...)
  • Salt
  • 4 tbsp flour
  • 2 eggs
  • Still water
  • Spices to your taste: nutmeg, cumin...

Autumn BLW recipes:

  1. First, prepare the fritter batter at least 2 hours in advance. To do this, mix the flour, eggs, and spices, adding a little water to achieve a more liquid consistency;
  2. Then slice the aubergine into rounds 4 to 6 mm thick;
  3. Place the rounds in a colander and add the spices;
  4. Leave to drain for about ten minutes, then mix;
  5. Place the aubergine on absorbent kitchen paper;
  6. Next, for the cooking stage, heat a little frying oil;
  7. Dip the rounds into the prepared batter, then fry for a few minutes on each side.
